Origin of Mac’s Steak In The Rough
In 1949, Dave McCarty started the restaurant in Artesia, New Mexico, a drive-in to a take-out restaurant serving mainly inexpensive steak in the rough. They opened their first restaurant in Albuquerque in 1954, and expanded into a chain across the city. The franchise is currently owned by Fresquez Companies, they have successfully reawakened the franchise after it was reduced to a single restaurant. And they have maintained control of the Mac’s Steak In The Rough concept, service, and products. They currently run the franchise as a famous drive-in and take-out restaurant in Albuquerque on Menaul Blvd., and in 2015 expanded into being a food truck and as a dine-in and take-out restaurant at Latitudes, across from Intel, in Rio Rancho. They have since closed their Rio Rancho locaiton, and instead focus on their main drive-in location and the food truck which visits events across New Mexico. The past and present expansions of Mac’s Steak In The Rough has made its logo, a cow sitting on a platter next to fries and dinner rolls, a symbol of New Mexican fast food alongside stalwarts like Blake’s Lotaburger’s man.
